Mackerel vignaiola style

Risotto is of course an Italian classic but the mixture of the white wine (particularly an Italian Sauvignon Blanc) with shell fish has to be tasted to be believed. This is another dish I learnt from my grandma when I used to visit my dad’s seaside hometown of Marche.

Mackerel vignaiola style is delightfully clever and delicious. The mackerel is cooked in sauted onions in oil over low heat whilst sprayed with wine, pepper and salt. The green beans Puglia style is green beans sauted in a pan with a sauce of tomatoes seasoned with extra virgin olive oil, garlic, chili and parsley. This classic fish side dish looks great and tastes even better.

Custard cream in a cup with cut strawberries is as simple as it sounds. Dipping in the Italian savoiardi biscuits is the real treat!
