Lasagna with asparagus and mascarpone cheese

As this is a vegetarian lasagna we’re replacing the stracchino cheese with mascarpone cheese. I find this gives the lasagna a lovely creamy texture as well as increases the milky taste to the Bechamel sauce.

Polpettone is a kind of vegetarian meatloaf with the protein coming from the green beans. The zinginess of the red pesto gives a perfect contrast to the potato mix. The confit tomatoes on the side are just so easy and so versatile. Also gorgeous with a bit of goats cheese and bread.

Panna cotta with strawberries is a traditional Piemontese recipe. Creamy, sugary, simple and very fast to make.
